Green Apple Slaw
Ingredients
- 1 cup thinly sliced green cabbage
- 1 cup thinly sliced red cabbage
- 1/2 cup grated carrots
- 4 green onions, whites and greens, thinly sliced
- 2 Granny Smith apples, cored and cut into matchsticks
- 1/2 cup mayonnaise
- 1/2 cup minced fresh parsley leaves
- 2 tablespoons whole-grain mustard
- 1 tablespoon honey
- 2 teaspoons apple cider vinegar
- 2 pinches kosher salt
Directions
Toss the cabbage, carrots, green onions and apples in a large bowl. In a separate bowl, whisk together the mayonnaise, parsley, mustard, honey, vinegar and salt in a small bowl until well combined. Add the dressing to the apple mixture and toss until well coated.
